Today I was invited to lunch with Paula, the other blogger on the site.  She made me a delicious salad with spinach, orange peppers, broccoli, cauliflower, scallops, and wheat germ.  I have heard her talk of wheat germ before but am uneducated on why it's good for you.  So, I decided to look it up.  Here's what I found:  It's very high in protein and usually higher than even most meats (which is actually a benefit for me because I don't love meat like most people.  I can stomach chicken, fish, and a little turkey burger but that's about it.)  It's a high source of nutrients and increases energy level as well as repairs tissue damage.  It contains a large amount of Vitamin E which is an antioxidant aiding in the prevention of the aging process and heart disease.  Many of the sites I found quoted it as a a natural weight-loss food and high in fiber.  Wow, I think I've been introduced to another food when I cook my meals!!!  The only question I have is if it's high in fat and calories?  Most sites I found said it's about 3g of fat for 1 oz. and 108 calories.  This is probably what I had on my salad, if not less.  I also had about 1/2 cup of pasta to get my starch in with my meal.  It was absolutely delicious and I highly recommend you try some of Paula's recipes and foods because she has cooked for me a few times and wow, she is an incredible cook.  She works wonders with healthy foods that make all of her meals taste just like a high-fat "meat and potatoes" kind of meal.  The amount of veggies she uses leave you feeling full and your palate pleased.


Breakfast - 

Low-fat, low-sugar Banana Nut Muffin


1 cup fat-free organic milk

Lunch - 

Salad (spinach, peppers, wheat germ, broccoli, cauliflower, 2 scallops)

Fat-free, sugar-free Caesar Dressing

1/2 cup cooked pasta

Snack - 

Jenny Craig Vitamin Bar

1/2 cup strawberries and blueberries

Dinner - 

2 oz. turkey

1/2 cup stuffing

Green Beans with 1 tbsp. margarine

Snack - 

100 calorie Cheetoh's

1 no-sugar added packet of hot-chocolate
