Today I made a delicious and low-fat veggie pizza. I've actually grown up with this as a staple for party's that my Mom always made. Now that my diet has been severely altered due to pregnancy I'm always looking for creative foods that sound appealing to me. I chose a reduced fat Pillsbury croissant dough that I unrolled to use as a pizza crust. Follow the directions accordingly for cooking. I then spread a thin layer of low-fat cream cheese (you can use regular but I used garden vegetable) on top of the crust. You're free to choose any veggies you want for the topping. Since I'm plain Jane right now I just had raw broccoli, carrots, and cauliflower. Lastly, sprinkle fat-free or low-fat cheddar cheese on top. Yum! TUESDAY Breakfast - Fiber One Pancake with 1/4 cup sugar-free syrup Nectarine 1 cup fat-free organic milk Lunch - 1 slice turkey bacon, 2 slices whole wheat bread, lettuce, tomato, fat-free mayo Fat-free yogurt Snack - 3/4 cup blueberries with fat-free cool whip Dinner - 3 slices of veggie pizza Snack - Skinny Cow
